Aloo gobhi matar tahri recipe is simple and flavorful rice recipe from Uttar pradesh which you can serve along with boondi or onion raita.

Ingredients
  

  • 2 Cups Basmati Rice
  • 1/2 Cup Potatoes Diced
  • 1 Cup Cauliflower Florets
  • 1/2 Cup Green Peas
  • 1/2 Cup Onion Chopped
  • 1/4 Cup Tomatoes Chopped
  • 2 Green Chilies Chopped
  • 2 Tsp. Ginger Garlic Paste
  • Salt to Taste
  • Red Pepper Powder to Taste
  • 1/2 Tsp. Coriander Powder
  • 1/2 Tsp. Garam Masala Powder
  • 1/2 Tsp. Turmeric Powder
  • 1 Tsp. Cumin Seeds
  • 2 Green Cardamoms
  • 2 Black Cardamoms
  • 1 Bay Leaf
  • 1 Star Anise
  • 3-4 Black Peppercorns
  • 2-3 Cloves
  • 4 Tbsps. Vegetable Oil

Instructions
 

  • Wash and Soak the rice in water for atleast 15-20 Minutes. 
  • Heat the oil in deep and thick bottom non-stick pan. 
  • Add Cumin seeds when they start splutter. 
  • Add cardamom, cloves, bay leaves, black peppercorns and cinnamon and sauté few seconds. 
  • Add ginger garlic paste and green chilies. 
  • Add onion and saute till to translucent. 
  • Add tomatoes and spices and cook till to soft.
  •  Add cauliflower, potatoes, and peas and saute 4-5 minutes. 
  • Add rice and mix well. Cook for 2 minutes. Add 4 cups of water and bring to a boil on high flame. 
  • Reduce the flame and cover with lid and cook for 2 whistles or till to done. 
  • Remove from the flame and serve immediately with raita, sauce and papad.
