Aloo Palak or Potato Spinach Curry is a vegan Indian dish made with potatoes, spinach, and spices.

- 3 Medium Potatoes Cut into Small Diced
- 3-4 Cups Spinach Chopped
- 1 Onion Chopped
- 1 Green Chili Chopped
- 1 Inch Ginger Chopped
- 2-3 Dried Red Chilies
- 1 Tsp. Cumin Seeds
- 2 Tbsps. Oil
- Pinch of Hing
- 1/2 Tsp. Turmeric Powder
- 1/2 Tsp. Red Chili Powder
- Salt to Taste
- 1/4 Tsp. Garam Masala
- 1 Tsp. Coriander Powder
- 1 Tbsp Lemon Juice
Heat the oil in a non-stick pan. When oil is hot, add cumin seeds.
When cumin seeds start crackle, add hing, ginger, red chili, green chili and cook for 1 minutes.
Add onion and cook till to soft and translucent.
Add chopped potato, and coriander powder, red chili, turmeric powder, and salt along with ΒΌ cup water. Mix well.
Close the pan with lid and let cook for 7-8 minutes until half done on low flame.
Now add chopped spinach and mix well. Cook for 4-5 minutes till to soft.
Now add garam masala and mix well. Add lemon juice and mix well.
Serve with roti and curd.
