Aloo Palak or Potato Spinach Curry

Aloo Palak or Potato Spinach Curry is a vegan Indian dish made with potatoes, spinach, and spices.

Ingredients
  

  • 3 Medium Potatoes Cut into Small Diced
  • 3-4 Cups Spinach Chopped
  • 1 Onion Chopped
  • 1 Green Chili Chopped
  • 1 Inch Ginger Chopped
  • 2-3 Dried Red Chilies
  • 1 Tsp. Cumin Seeds
  • 2 Tbsps. Oil
  • Pinch of Hing
  • 1/2 Tsp. Turmeric Powder
  • 1/2 Tsp. Red Chili Powder
  • Salt to Taste
  • 1/4 Tsp. Garam Masala
  • 1 Tsp. Coriander Powder
  • 1 Tbsp Lemon Juice

Instructions
 

  • Heat the oil in a non-stick pan. When oil is hot, add cumin seeds.
  • When cumin seeds start crackle, add hing, ginger, red chili, green chili and cook for 1 minutes.
  • Add onion and cook till to soft and translucent.
  • Add chopped potato, and coriander powder, red chili, turmeric powder, and salt along with ΒΌ cup water. Mix well.
  • Close the pan with lid and let cook for 7-8 minutes until half done on low flame.
  • Now add chopped spinach and mix well. Cook for 4-5 minutes till to soft.
  • Now add garam masala and mix well. Add lemon juice and mix well.
  • Serve with roti and curd.
