Amish Khichdi Recipe

Amish khichdi is Bengali style masoor rice khichdi which made with onion, garlic and lots of vegetables.

Ingredients
  

  • 1 Cup Basmati Rice
  • 1 Cup Red Lentils Masoor Dal
  • 1/2 Cup Cauliflower
  • 1/4 Cups Carrots
  • 1/4 Cups Green Peas
  • 1/4 Cups Green Beans
  • 1/2 Cups Potatoes
  • 1 Medium Sized Onion Chopped
  • 1/2 Tsp. Garlic Paste
  • 1 Green Chili Chopped
  • 2 Whole Dry Red Chilies
  • 2 Bay Leafs
  • 1 1/2 Tbsps. Mustard Oil
  • 1/2 Tsp. Cumin Seeds
  • 1/2 Tsp. Turmeric Powder
  • 1 Tsp. Cumin Powder
  • 1 Tsp. Coriander Powder
  • 1/2 Tsp. Red Chili Powder
  • Salt to Taste
  • 1/4 Tsp. Garam Masala
  • 2 Tbsp. Green Coriander Chopped

Instructions
 

  • Wash and soak the dal and rice in water for atleast 2-3 hours. Drain the excess water. 
  • Heat the 1 tbsp. ghee in cooker, add dal and rice in pressure cooker with 4 cups of water. Cover and cook in pressure cooker till to soft.
  • Heat the mustard oil in a pan.
  • Add cumin seeds and when they start crackle, add dry red chilies and bay leafs. 
  • Now add ginger paste and green chilies. 
  • Add chopped onion and saute well. 
  • Add turmeric powder, coriander powder, cumin powder, red chili powder, garam masala and saute for few minutes. Add little water to avoid burnt masala. 
  • Add par boiled vegetables and saute for 3-4 minutes. 
  • Add cooked rice and dal mixture with salt and little water. Cover with lid and cook again for five minutes more. 
  • Transfer into a serving dish and garnish with extra dollop of ghee and coriander leaves. 
  • Serve hot with baigun bhaja and curd.
