Wash and soak the dal and rice in water for atleast 2-3 hours. Drain the excess water.
Heat the 1 tbsp. ghee in cooker, add dal and rice in pressure cooker with 4 cups of water. Cover and cook in pressure cooker till to soft.
Heat the mustard oil in a pan.
Add cumin seeds and when they start crackle, add dry red chilies and bay leafs.
Now add ginger paste and green chilies.
Add chopped onion and saute well.
Add turmeric powder, coriander powder, cumin powder, red chili powder, garam masala and saute for few minutes. Add little water to avoid burnt masala.
Add par boiled vegetables and saute for 3-4 minutes.
Add cooked rice and dal mixture with salt and little water. Cover with lid and cook again for five minutes more.
Transfer into a serving dish and garnish with extra dollop of ghee and coriander leaves.
Serve hot with baigun bhaja and curd.
