Bharwan Lauki or Stuffed Bottle Gourd Gravy

Bharvan Lauki is one of the popular dish from Banaras in which lauki stuffed with paneer, potato, onion, dry fruits and spices and served in rich and creamy tomato based gravy. You can serve bharvan lauki with laccha paratha or garlic naan.

Ingredients
  

For Lauki Suffing

  • 1 Bottle Gourd (Lauki)
  • 1/2 Cup Grated Paneer
  • 1/2 Cup Potato, Boiled and Mashed
  • 1/4 Cup Onion, Chopped
  • 2 Green Chilies, Chopped
  • 2 Tbsps. Coriander Leaves, Chopped
  • Few Cashews, Broken
  • Few Raisins
  • Salt to Taste
  • 1/2 Tsp. Coriander Powder
  • 1/2 Tsp. Raw Mango Powder
  • 1/2 Tsp. Yellow Chili Powder
  • 3 Tbsps. Oil

For Tomato Gravy

  • 2 Cups Chopped Tomatoes
  • 1/2 Cup Onion, Sliced
  • 1 Tsp. Ginger Paste
  • 2 Tbsps. Oil
  • Salt to Taste
  • 1/2 Tsp. Turmeric Powder
  • 1/2 Tsp. Coriander Powder
  • Red Chili Powder to Taste
  • 1/2 Cup Fresh Cream
  • 2-3 Cloves
  • 1 Tsp. Cumin Seeds
  • 2 Green Cardamoms
  • 3-4 Black Peppercorns

Instructions
 

For Stuffing

  • Combine crumbled paneer, mashed potatoes, green chilies, coriander, spices, raisins and cashews in large bowl and mix well. Keep aside.
  • Wash and peel the lauki, cut into halves and scoop out the center. Combine the bottle gourd pieces with salt and enough water in a deep pan and cover with lid. 
  • Cook on a medium flame for 5-10 minutes or till to tender. Drain well and keep aside to cool. 
  • Stuff each piece of lauki with filling and keep aside. 
  • Heat the 3-4 tbsp oil in non-stick pan and cook the lauki pieces on a medium flame till to little golden. 
  • Drain and keep aside to cool. Cut the lauki pieces into roundel shape. 

For Tomato Gravy

  • Heat the oil in same non-stick pan, add cumin seeds, cloves, cardamom, peppercorns and onion. Sauté till to golden brown. 
  • Add tomatoes and ginger paste and sauté few seconds. Add 1/2 cup of water and cook on medium flame till to soft, cover with lid. 
  • Allow to cool slightly and blend in a mixer till to smooth consistency. Keep aside.
  • Add the tomato mixture, chili powder, turmeric powder, garam masala, salt and mix well. Cook on a medium flame for 5 minutes. 
  • Add fresh cream and 1/4 Cup of water and again cook for 5 minutes while stirring occasionally. Add stuffed slices of lauki into gravy.
  • Garnish with coriander and fresh cream and serve immediately with naan or paratha.
