Dal Khichdi Risotto

Dal Khichdi risotto is a fusion khichdi recipe where we cooked rice and dal together as risotto style.

Ingredients
  

  • 1 Cup Arborio Rice
  • 1/2 Cup Whole Green Gram Sabut Moong Dal
  • 1/4 Cup Onion Finely Chopped
  • 2 Green Chilies Finely Chopped
  • 1 Tsp. Ginger Chopped
  • 1 Tsp. Garlic Chopped
  • 1 Tsp. Mustard Seeds
  • 1 Tsp. Cumin Seeds
  • Salt to Taste
  • 1/2 Tsp. Turmeric Powder
  • Few Curry Leaves
  • 3 Cups Vegetable Broth Optional
  • 2 Tbsps. Olive Oil
  • 2 Tbsps. Butter
  • 2 Tbsps. Coriander Chopped

Instructions
 

  • Wash and soaked the green gram in water overnight. Drain the excess water and keep aside. 
  • Heat the butter and olive oil in a non-stick pan.
  •  Add mustard seeds and cumin seeds when they start splutter. 
  • Add ginger, garlic and green chilies and saute few seconds. 
  • Add chopped onion and saute till to translucent. 
  • Add rice and saute few seconds in ghee. 
  • Add moong dal, salt, turmeric powder and mix well. 
  • Add 3 Cups water or broth mix and cover with lid. Cook till to soft and mushy. 
  • Add coriander leaves and mix well. Serve hot with papad and chutney.
