Fruits and Corn Salad

This summer salad recipe is combination of summer fruits and vegetables, dressed with mint chutney, good option for side dish.

Ingredients
  

  • 1 Cup Pineapple, Diced
  • 1 Cup Watermelon, Diced
  • 1 Cup English Cucumber, Diced
  • 1 Cup Sweet Corn Kernels
  • 1/2 Cup Lettuce, Torn
  • 2 Tbsps. Coriander Leaves, Chopped
  • 2 Tbsps. Cranberries, Dried
  • 2 Tbsps. Almonds, Roasted

For Mint Dressing

  • 2 Tbsps. Mint Chutney
  • Salt to taste
  • Lemon Juice
  • 1 Tbsps. Honey

Instructions
 

  • Combine mint chutney, salt and honey in small bowl and mix well. 
  • Combine all the ingredients in a deep bowl and add mint dressing over it and toss well. Serve chilled.
