Fruits and Corn Salad

This summer salad recipe is combination of summer fruits and vegetables, dressed with mint chutney, good option for side dish.

- 1 Cup Pineapple, Diced
- 1 Cup Watermelon, Diced
- 1 Cup English Cucumber, Diced
- 1 Cup Sweet Corn Kernels
- 1/2 Cup Lettuce, Torn
- 2 Tbsps. Coriander Leaves, Chopped
- 2 Tbsps. Cranberries, Dried
- 2 Tbsps. Almonds, Roasted
For Mint Dressing
- 2 Tbsps. Mint Chutney
- Salt to taste
- Lemon Juice
- 1 Tbsps. Honey
Combine mint chutney, salt and honey in small bowl and mix well.
Combine all the ingredients in a deep bowl and add mint dressing over it and toss well. Serve chilled.
