Vaghareli Khichdi is healthy and one pot meal from gujarat which made with moong dal, rice, vegetables and wholesome spices.

- 1/2 Cup Rice
- 1/2 Cup Moong Dal (Split Yellow Gram)
- 1/4 Cup Potatoes Cubed
- 1/4 Cup Carrot Peeled and Chopped
- 1/4 Cup Frozen or Fresh Green Peas
- 4-5 Cauliflower Florets
- 1/2 Tsp. Ginger Paste
- 2 Green Chilies Chopped
- 2 Tbsps. Peanuts
- 1 Tbsp. Cashew nuts Broken
- 1/2 Tsp. Red Chili Powder
- 1/2 Tsp. Garam Masala
- 1/2 Tsp. Turmeric Powder
- Salt to Taste
For Tempering
- 1 Bayleaf
- 1/2 Inch Cinnamon
- 2-3 Cloves
- 2-3 Blackpepper corns
- Few Curry Leaves
- 2 Dry Red Chilies
- 1 Tsp. Mustard Seeds
- 1/2 Tsp. Cumin Seeds
- 1/2 Tsp. Asafoetida
- 3-4 Tbsps. Desi Ghee or Oil
Wash and soak the rice and dal in water for 30 minutes. Drain the excess water and keep aside.
Heat the ghee in pressure cooker.
Add cumin seeds, bay leaf, mustard seeds, asafoetida, cinnamon stick, cloves, dry red chilies, curry leaves and saute few seconds.
Add ginger paste and green chilies and saute few seconds.
Add broken cashews, peanuts and vegetables and mix well.
Add salt, turmeric powder, red chili powder and garam masala and mix well.
Add soaked rice and dal in pressure cooker with 3 cups of water and mix well. Cover with lid and cook it till to 4-5 whistles.
Transfer into serving plate. Serve with papad and pickle.
