Vaghareli Khichdi is healthy and one pot meal from gujarat which made with moong dal, rice, vegetables and wholesome spices.

Ingredients
  

  • 1/2 Cup Rice
  • 1/2 Cup Moong Dal (Split Yellow Gram)
  • 1/4 Cup Potatoes Cubed
  • 1/4 Cup Carrot Peeled and Chopped
  • 1/4 Cup Frozen or Fresh Green Peas
  • 4-5 Cauliflower Florets
  • 1/2 Tsp. Ginger Paste
  • 2 Green Chilies Chopped
  • 2 Tbsps. Peanuts
  • 1 Tbsp. Cashew nuts Broken
  • 1/2 Tsp. Red Chili Powder
  • 1/2 Tsp. Garam Masala
  • 1/2 Tsp. Turmeric Powder
  • Salt to Taste

For Tempering

  • 1 Bayleaf
  • 1/2 Inch Cinnamon
  • 2-3 Cloves
  • 2-3 Blackpepper corns
  • Few Curry Leaves
  • 2 Dry Red Chilies
  • 1 Tsp. Mustard Seeds
  • 1/2 Tsp. Cumin Seeds
  • 1/2 Tsp. Asafoetida
  • 3-4 Tbsps. Desi Ghee or Oil

Instructions
 

  • Wash and soak the rice and dal in water for 30 minutes. Drain the excess water and keep aside.
  • Heat the ghee in pressure cooker.
  • Add cumin seeds, bay leaf, mustard seeds, asafoetida, cinnamon stick, cloves, dry red chilies, curry leaves and saute few seconds.
  • Add ginger paste and green chilies and saute few seconds.
  • Add broken cashews, peanuts and vegetables and mix well.
  • Add salt, turmeric powder, red chili powder and garam masala and mix well.
  • Add soaked rice and dal in pressure cooker with 3 cups of water and mix well. Cover with lid and cook it till to 4-5 whistles.
  • Transfer into serving plate. Serve with papad and pickle.
