Methi Muthia is a deep fried gujarati snack which made from wheat flour, besan, sugar, sooji and methi.

- 2 1/2 cups chopped fresh fenugreek leaves/ methi
- 1 cup Whole wheat flour
- 1/2 cup Bengal gram flour/ besan
- 2 tbsp. Semolina/ Sooji
- 1 Lemon juice
- 1 tsp. Turmeric powder
- 1 tsp. Red chili powder
- 1 tbsp. Coriander powder
- 1 tsp. Cumin powder
- 1 tbsp. Sugar
- 1/2 tsp. Fruit salt
- 2 tbsp. Vegetable oil
- Water as required
- Salt to taste
- Oil for deep frying
Take chopped fresh fenugreek leaves in a vessel.
Add salt and lemon juice to it. Set it aside for 10 minutes till the leaves are moist.
Add all flours, spices, and all the ingredients except water and oil and mix it well.
Add oil and again mix it, now add water as required.
Knead the mixture into hard dough.
Make small balls of the mixture and give it an oval shape.
Heat oil in a deep pan and fry muthiyas in oil over low flame till it turns golden brown in color.
Drain it on absorbent paper and serve with green chutney.
