Paneer Lifafa Paratha is a stuffed paratha recipe which looks crusty outside and soft inside, made in envelope shape with paneer stuffing.

Ingredients
  

For Dough

  • 2 Cups Whole Wheat Flour
  • Salt to Taste
  • 1 Tsp. Oil
  • Oil for Cooking

For Stuffing

  • 1 Cup Crumble Cottage Cheese, Paneer
  • 1/2 Cup Onion, Chopped
  • 1/2 Cup Tomato, Chopped
  • 2 Green Chilies, Chopped
  • 1 Tsp. Ginger Garlic Paste
  • 2 Tbsps. Oil
  • Salt to Taste
  • 1/2 Tsp. Turmeric Powder
  • 1 Tsp. Cumin Seeds
  • 1/2 Tsp. Coriander Powder
  • 1/2 Tsp. Amchur Powder

Instructions
 

For Stuffing

  • Heat the oil in pan and add cumin seeds. When they starts splutter, add onion, ginger and chilies. Saute till to translucent. 
  • Add chopped tomatoes, turmeric powder, amchur masala, salt, coriander powder. Mix well and cook till to soft. 
  • Add crumble paneer and coriander leaves and saute for 2 minutes. Keep aside to cool. 

For Dough

  • Combine flour, salt, oil together and mix well. Add water to knead soft dough. Cover and Keep aside. 

For Making Paratha

  • Divide the dough into equal portions and roll each portion of dough into a round form like chapatti, using rolling pin. 
  • Place the stuffing in the center and spread horizontally. Fold the upper half of roti over the stuffing. Fold the lower half also over the stuffing to overlap it like envelope. 
  • Heat the tawa and cook the paratha both sides and grease with oil till to golden brown. 
  • Serve hot parathas with chutney or curd.
