Samak Rice Khichdi

Samak Khichdi is made by samo rice or vrat ke chawal and served with curd and chutney during fasting days.

Ingredients
  

  • 1/2 Cup Samak Rice
  • 2 Medium Sized Potatoes Cubed
  • 2 Green Chilies Chopped
  • 2 Tbsp. Peanuts Crushed
  • 1 Tsp. Cumin Seeds
  • Rock Salt to Taste
  • Black Pepper Powder to Taste
  • 2 Tbsps. Desi Ghee
  • 2-3 Tbsps. Green Coriander Chopped

Instructions
 

  • Wash, Clean and Soak the rice in water for 30 minutes and drain the excess water and keep aside.
  • Heat the ghee in non-stick pan.
  • Add cumin seeds and slightly roast it.
  • Add green chilies, chopped potatoes, crushed peanuts and roast it.
  • Add salt, black pepper powder and soaked rice and mix it.
  • Add 2 1/2 cups water and stir well.
  • Cover and cook the khichdi on medium heat till to cooked or puffed.
  • Transfer the khichdi in serving plate and garnish with extra ghee and coriander leaves.
  • You can serve this khichdi with coriander chutney and masala curd.
