Baingan Ka Chokha- Bihar Special

Bihari cuisine is eaten mainly in
Bihar, Jharkhand, U.P, Nepal, Fiji, Bangladesh and some more regions. This is very 1st time
when I tried Bihar Cuisine.  There are so many popular dishes in Bihar i.e. Sattu, chokha, fish curry, kebab, halwa, liti and more. This time I prepared Chokha, It’s a
mashed  and spicy recipe with vegetable. I used brinjal or eggplant or baingan to
prepare chokha that’s call “Baingan Ka Chokha”.

Baingan ka bharta is very popular
Indian veg. recipe which made by mashed eggplant but Baingan ka Chokha is
little differ then bharta. In chokha, we grill all ingredients on charcoal or
direct flame i.e onion, tomatoes, green chili and eggplants. Mash and Cook with
spices, its call chokha. For this recipe, first we have to roast eggplant,
onion, tomatoes, green chili and mashed them in roughly form. Cook with spices
and serve with puri, paratha or roti.

Servings: 3
Ingredients
1 Big Brinjal/ Baingan
1 Medium sized Onion/ Pyaaz
2 Small Tomatoes/ Tamatar
2 Green Chilies/ Hari Mirch
1/2 Tsp. Ginger Paste/ Adrak
1/2 Tsp. Cumin Seeds/Jeera
Coriander Powder/ Daniya Powder
Salt to Taste/ Namak
1 Tbsp. Mustard Oil/ Sarso ka tel
Pinch of Asafoetida/ Hing
Green Coriander, Chopped

Direction
Grease the brinjal with mustard oil and prick
the brinjal with fork. Roast the onion, tomatoes, green chili and brinjal separately
on medium flame. Peel the skin of brinjal and tomatoes. Chop onion, tomatoes, brinjal and green chili in fine and rough form.
Heat mustard oil in pan till to smoking
point. Add cumin seeds and asafoetida, when start splutter. Add chopped green
chili, ginger paste and sauté one minute. Add chopped onion and sauté for 2
minutes. Add chopped tomatoes and brinjal mix well. Add salt and coriander powder
mix well. Cook for 5 minutes more and garnish with green coriander. Now baingan
ka chokha is ready to serve with sattu ki roti.
Note: Don’t mashed
onions and tomatoes completely, just chopped finely.

  2. बैंगन का चोखा बहुत ही अच्छा होता है मै तो हमेशा अपने घर में खता हूँ, आप सभी लोग बनाये और खाए बहुत ही स्वादिस्ट चोखा होता है बैंगन का.
