Beetroot Laddoo

Beetroot is a vegetable which is very good
for health and skin both, it contains vitamins, proteins, zinc, magnesium and iron
too. This time I choose “Beetroot Laddoo or Beet Raava Laddu” for festival
season under dessert from vegetable theme.
For this recipe, we have to cook everything
in ghee which enhance the taste of laddoos and combined in large bowl, prepare
small balls and garnish with cashew or almond halves. Beetroot specially used
for salad, adding color in food, savory items but this is my first trial to use
beet in sweet recipe. It is very simple and easy recipe plus healthy too. You
can store these laddoos for 5-6 days in airtight jar.
When my dish is ready, I was very happy
because it looks vibrant and delicious. Beetroot helps to reduce blood pressure
and heart attack problems. Its help in maintaining sugar level in blood and
maintain the good health.

Ingredients:
1 Beetroot, peeled and grated
2/3 Cup Semolina, sieve
4 Tbsp. Clarifying Butter/ Desi Ghee
1 Cup Powdered Sugar
2 Tbsp. Coconut Powder
1 Tsp. Cardamom Powder
Few Cashews and Almonds
1 Tbsp. Milk (optional)
Instructions:
Heat the 1 tbsp of ghee in non-stick pan and
roast the cashews and almonds for few minutes and keep aside in separate bowl.
Add the coconut powder and roast it until to
brown, take it out and keep in same bowl.
Add two tbsp. of ghee, Add semolina or sooji
and roast until to light brown and aroma comes. Take it out and again add in same
bowl.
Add remaining ghee in pan and add grated
beetroot and fry until to dry and cooked, keep aside to cool. Add sugar,
cardamom and milk, mix well.
Combine
everything together in large bowl and start making small balls (laddoo), keep
in serving plate. Garnish with cashew halves and silver varq.
Notes:
Add milk little by little in mixture to
combine together to make round balls.
Adjust the sugar quantity as per tastebuds. Even
you add any choice of drynuts.
You can keep these beetroot sweets in an airtight
jar for one week.
