Chilled Cucumber Soup

Though the
summer days are hot, for this time I prepare “Chilled Cucumber Soup” which is
very good option for summer season. I choose this soup recipe under seasonal
food theme for blogging marathon. For this soup, we have to just blend curd and
cucumber together and serve chilled with mint flavor. Chilled Cucumber soup is
easy to prepare and delicious in taste, its low calorie soup filled with
goodness of cucumber, mint and low fat curd.

Ingredients
1 Cup Fresh Cucumber
1 Cup Curd
2 Tbsp. Mint, Chopped
Salt to taste
Ice Cubes
Lemon Wedges for Garnishing
Direction
Peel and chop roughly the cucumbers. Combine together cucumber, chopped mint, curd, salt and ice cubes into blender
and blend it till to smooth consistency. Serve this chilled soup into
glasses or soup bowl. Garnish with ice-cubes, lemon wedges and cucumber stick.
