Qubani ka meetha or you can say khubani ka
meetha is an Indian dessert which prepared from dried apricots and comes from Hyderabadi
cuisine. It’s a traditional recipe which very popular in Hyderabadi weddings.
For this recipe, we have to boil the soaked
apricots with syrup until they assume the consistency of thick compote or puree
form. This dessert is garnished with slivered almonds and served with small
scoop of vanilla ice-cream or whipped cream whatever you like.
Khubani is Urdu word for apricot. It’s a simple
yet most delicious and rich flavored dessert I had tasted. Apricots are good
source of vitamins, irons, fibre and more healthy nutrients. In this recipe, I prefer
to use golden Turkish apricots which gives bright and vibrant color to dessert.

Ingredients:
2 Cup Dried Turkish Apricots (golden and
seedless)
1/2 Cup Sugar
12 Almonds, chopped
4 Scoops Vanilla Ice cream

Instructions:
Soak the dried apricots in 2 Cup water
for overnight or atleast 8 hours.
Heat the non-stick pan on medium flame. Add the soaked apricots with same golden water.
Add sugar and cook until to sugar
dissolve completely and apricots become soft and mashy.
Puree the half of apricots in blender and again cook
reserved apricots with puree for 4-5 minutes more.
Place the apricot compote in serving
bowl, garnish with chopped almonds and serve with vanilla ice-cream scoop or cream.
