A beetroot raita is quick and simple recipe which made with yogurt, beetroot and some Indian spices. It’s a very healthy accompaniment of yogurt which you can serve as side dish.
Beetroot raita recipe is one of the delicious raita recipes made of beetroot and curd. This raita is healthy and delicious. Adding onion and green chilies in beetroot raita makes more flavorful and crunchy. This is optional. Even you can add mint leaves also for fresh taste and garnishing. This raita goes well with any rice recipe such as pulao or biryani.
Beetroot is of exceptional nutritional value especially the greens which are rich in calcium, iron and vitamins A and C. Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium.

Ingredients
1 Beetroot, Peeled and Grated
2 Cups Yogurt, Whisked
Black Salt to Taste
1 Tsp. Roasted Cumin Powder
Red Chili Powder to Taste
Chaat Masala To Taste
1 /4 Cup Onion, Chopped
1 Tsp. Green Chilies, Chopped
2 Tbsp. Green Coriander, Chopped
How to make Beetroot Raita:
Peel and grated the beetroot and boil it with enough water in saucepan or pressure cooker till to tender. Blend it till to smooth. Now combine whisked yogurt, beetroot puree, salt, roasted cumin powder, red chili powder, green chilies, onion and coriander leaves and mix well. Keep in refrigerator for 2 hours to set. Serve chilled with main course.

I need to make this raita just for its beautiful color. Beetroot stir fry is one of my favorite to eat with curd rice. I am sure I will be eating this whole bowl by myself without sharing.
