Naga cuisine is known for its variety and simplicity. Galho is a soupy concoction of fresh and leafy vegetables and rice with meat or without meat. It is very similar to North Indian khichdi dish. It can be prepared with meat or without meat. This time I shared vegetarian version of Galho which made with leafy vegetables, rice and fresh vegetables. I did not add axone which is fermented soybeans.
Naga people love rice recipes especially in the form of Galho. The Angami Nagas are the original creators of this dish; however this dish is now a popular food item across Northeastern India. A vegetarian galho is a very simple dish often garnished with just ginger-garlic or nothing at all. You can use any green leafy vegetables such as mustard leaves, spinach, squash leaves and more.
Try some other khichdi recipe: Balaee khichdi, Corn Khichdi, Farali Khichdi, Bajre ki Khichdi, Chana Dal Khichdi and more.
Ingredients of Galho:
2 Tbsps. Rice
1 Medium Sized Tomato, Chopped
1 Medium Sized Onion, Chopped
4-5 Green Beans, Chopped
1 Tsp. Garlic, Chopped
1 Tsp. Ginger, Chopped
1 Tsp. Green Chilies, Chopped
Few Spinach Leaves, Roughly Chopped
1/2 Small Cabbage, Chopped
Salt to Taste
How to Make Galho at home:
Boil the water in deep pan, add rice and cook till to fluffy. Add ginger, garlic, onion, tomatoes and green chilies and mix well. Add beans and roughly chopped cabbage and spinach and mix well. Cover and cook till to soften alike khichdi consistency. Add salt and mix well. Serve hot.

Ingredients
