Valachi Khichdi is known as Val beans khichdi or walachi khichdi, Dalimbyacha Khichdi or biryacha bhat. Val beans are good source of protein and slightly bitter in taste. Valachi khichdi is very popular recipe in Marathi cuisine which made with field beans or vaal beans and rice. It can be served with desi ghee, pickle, kadhi and curd.
Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet.
How to Soak the Vaal dal or Field beans:
Clean, wash and soak the vaal in enough water overnight. Discard the water and wash again the dal use as required.

Good source of protein and dietary fibre. It is low in fat and rich in B complex vitamin, calcium and potassium.
Ingredients
1/2 Cup Rice
1/2 Cup Vaal or Field Beans, Sprouted
1/2 Cup Chopped Onion
1/4 Cup Tomato, Chopped
1 Tsp. Garlic, Chopped
1/2 Tsp. Cumin Seeds
1/2 Tsp. Mustard Seeds
Pinch of Asafoetida
Salt to Taste
1/2 Tsp. Chili Powder
1/4 Tsp. Turmeric Powder
1 Tsp. Goda Masala or Garam Masala
2 Tbsps. Oil
2 Tbsps. Coriander, Chopped
1/4 Tsp. Jaggery, Optional
How to make Vaalchi Khichdi:
Wash rice and dal beans properly and keep aside. Heat oil in pressure cooker and add mustard seeds, cumin seeds, asafoetida and curry leaves. When they start splutter, add chopped garlic and onion. When onion starts translucent, add chopped tomatoes, masalas and saute for a minute. Add beans, rice, jaggery and saute for two minutes. Add 1 Cup water and salt and mix well. Cover with lid and cook for 15 minutes or till to done. Garnish with desi ghee and coriander. Serve hot with sol kadhi or curd.

I made val khichdi as my ‘V’ dish too. The simple khichdi turns into unique and flavor loaded one with the addition of goda masala.
Adding goda masala definitely elevates the taste of this khichdi. Shall try this version soon.
Vaal khichadi looks lovely. Vaal is cooked with a little bit of sugar in Gujarat, to avoid that mild bitterness. The khichadi is full of protein.
Kichdi is one recipe that combines protein, carbs and fat and is such a wonderful balanced meal. This vaal beans version sounds so yum.
I too had done a pulao with the Val and loved it, khichadi must have tasted good. I love such gooey textured dishes, makes it easy to make.
