K- Kobha Roti | Biscuit Roti Recipe | Jadi Roti

Kobha roti comes from Rajasthan state. This roti is known by name of Kobha roti, biscuit roti or jadi roti. Khoba means incision on bread, which makes this Rajasthani bread more delightful. It is so pretty in texture that is the main reason I tried this bread. This texture helps to absorb the extra ghee or butter in bread.

Even you can add the flavor to enhance the flavors such as garlic, fenugreek, spices and more.  The best part of food blogging is that i get a chance to explore new recipes every time for my blog.  Because of these experiments I tried Kobha roti. You can serve kobha roti with any gravy or dal, chutney and pickle.

 

 

If you like crisp, crunchy and biscuit type of bread then kobha is perfect recipe for your tastebuds. You can cook this bread on gas, tandoor or oven. I prefer open gas which gives burnt taste with grilled marks. Rajasthani delicacies are not only good in taste but really appealing too. This cuisine is generally hot and spicy and makes use of plenty of ghee in each dish.

Ingredients

1 Cup Wheat Flour

1/4 Tsp. Salt

1/2 Tsp. Cumin Seeds

2 Tbsps. Clarified Butter/ Desi Ghee

 

How to Make Khoba Roti:

Combine salt, flour, jeera and 2 tsp. ghee in large bowl and mix well. Now add water and knead stiff dough. Cover and keep aside for atleast 15 minutes. Now again knead the dough until the smooth. Grease your hand and make a round shape. Divide the dough into two portions and roll it into thick roti using rolling pin.

Heat the tawa and place the roti on heated tawa and cook on low flame. Use your finger, to make push, pinch and lift the dough at various places in symmetrical form on the surface. Now cook with the pinches side and again cook on open flame for two minutes till slightly cooked and brown marks. Apply desi ghee and serve hot and crisp bread with any curry and chutney.
