Makhana Kheer

Makhana kheer, it’s a very light and healthy kheer which prepared by using lotus seed pop and milk combo. You can serve this kheer recipe during navratri or fasting period. The lotus flower produces edible seeds, which you can eat cooked or raw. Lotus seeds are good source of protein, magnesium, potassium, and phosphorus. They are also low in saturated fat, sodium, and cholesterol.

What are Lotus Seeds?

Lotus seeds are commonly known as Makhana, which generally consume it during their fasts or even use it as an ingredient in Indian cuisines or desserts. It is easily available in the market and has a very good shelf life and can be stored for a long time in an airtight jar.

Lotus plant grows in Southeast Asia and scientifically known as Nelumbo Nucifera. You can consume lotus seeds roasted, fried and raw. In China, the seeds aren’t only used in traditional medicine, but they used its petals to spice up their meals and to prepare herbal teas as well.

 

Nutrition Values of Makhana

In a 100 gm of dried lotus seeds include 332 calories and contain 64% carbohydrates, 2% fat, 15% protein, and 14% water. The seeds contain B vitamins in rich content, particularly thiamin at 43% of the Daily Value, and numerous dietary minerals, such as manganese and phosphorus.

Ingredients

500ml Milk

1/2 Cup White Makhana/ Lotus Seed Pops

2 Tsp. Almond Flakes

1 Tbsp. Sugar

1 Tsp. Green Cardamom Powder

 

How to Make Makhana Kheer:

Heat the milk in the deep bottom vessel until it is condensed to 2/3 in quantity. Add crushed lotus seed pops into milk and stir continuously until it is reduce and become thick. Now add sugar and cardamom powder into reduce milk and mix well. Remove the kheer from the fire and garnish with almonds flakes. Cool the kheer for at least 2 hours. Serve chilled.
