Bajra Khichdi Recipe from Haryana (Haryanvi Bajra Khichdi)

Bajra is very popular in North India especially in the states of Gujarat, Rajasthan and Uttar Pradesh. Bajra khichdi is a very healthy and tasty savory porridge which made with pearl millet, green lentils and rice. It is very popular khichdi in Haryana and Rajasthan. It can be served with buttermilk, kadhi, milk, curd, jaggery and pickle. There are so many recipes which made with bajra such as bajra ka rotlo, bajra khichdi, bajra bhakri and more. Bajra is good and healthy millet which keeps warm and gives energy in cold weather.

I shared simple bajra khichdi recipe, the way mom cooked up regularly in winters. My mom never uses onion, garlic, and ginger in this khichdi not even spice also. We always brought sabut bajra or whole pearl millet from market and crushed it in mortar pestle to remove the husk. You can use mixer also to save time and energy.

 

What are the benefits of bajra or pearl millet?

Bajra is a full rich in essential nutrients like protein, fibre, phosphorous, magnesium and iron. Bajra is an excellent source of fiber which not only helps in weight loss but also prevents weight gain. It is a healthy and gluten free alternative to wheat which improves digestion and good for diabetic person.

 

 

How to Serve Bajra Khichdi?

It can be served with buttermilk, kadhi, curd, milk, jaggery and pickle. My father likes to eat with milk but my choice is buttermilk.

Ingredients for Bajra Khichdi:

1/2 Cup Pearl Millet (Bajra)

1/4 Cup Green Moong Dal

1/4 Cup Rice

Salt to Taste

1 Tsp. Cumin Seeds

4 Tbsps. Desi Ghee

Coriander Leaves, For Garnishing

 

How to Make Bajra Khichdi:

Add bajra into mortar and sprinkle little water on the bajra and then slightly crush the bajra using pestle or in the mixer if you have not mortar and pestle. Transfer the bajra into a plate and gently crush with hands to remove the husk from bajra.

Wash the dal and rice properly and soak in water for 20-25 minutes. Drain the excess water and keep aside. Heat the ghee in deep and thick bottom pan. Add cumin seeds, when they start splutter. Add bajra, rice, dal, salt with 4 cups of water. Cover with lid and cook till to soft and slightly mashy. Stir occasionally to avoid burnt. Add ghee on the top and serve hot with buttermilk or milk. You can add hot water to adjust consistency if khichdi become thick.
