Corn Khichdi is a very simple khichdi recipe which made with crushed sweet corn kernels and rice. I love the sweet, spicy and tangy flavor of this recipe. It is served with curd, pickle or any Indian chutney. You can use fresh corn or frozen corn kernels which are easily available.
Sweet corn khichdi is a delicious and nutritious recipe which you can prepare in few minutes without any efforts. You can serve this dish as lunch or dinner menu. Sweet corn adds the sweetness in this khichdi, so you can add the sugar according to sweetness of corn.
The taste of this corn khichdi is medium spicy and perfect balance of sweet and spicy taste. You can add lemon juice also for extra tangy flavor.
Try some other variation of khichdi: Aamish Khichdi, Balaee khichdi, Gujarati Khichdi, Moong Dal Khichdi and Chana Dal Khichdi.

Ingredients for Khichdi:
1/2 Cup Basmati Rice, Soaked
1/2 Cup Corn, Semi Crushed
1/4 Cup Green Pes
1/2 Cup Milk
1/2 Cup Water
1/2 Tsp. Ginger, Grated
2 Green Chilies, Chopped
1 Tsp. Sugar
1/2 Tsp. Garam Masala
1/2 Tsp. Turmeric Powder
Salt to Taste
2 Tbsps. Desi Ghee
Small Stick Cinnamon
2 Green cardamom
2-3 Cloves
1 Small Bay leaf
2 Dry Red Chilies
Green Coriander, Chopped
How to make Corn Khichdi recipe:
Wash and Soak the rice in water for 20 minutes. Drain the excess water and keep aside. Add the corn in grinder and crush them half.
Heat the ghee in a hot pressure cooker and add cinnamon, bay leaf, cloves, red chili and cardamom. Add corn and green peas and cook for few minutes. Add rice, ginger paste, chopped green chilies, sugar, garam masala, turmeric powder, salt and mix well. Add water and milk and mix well. Cover the pressure cooker and cook till to 3-4 whistles. Open the lid and mix well. Serve hot garnish with coriander leaves and chopped onion.

The khichdi looks so vibrant and inviting. I guess the addition of mashed corn and milk lends a creaminess to the khichdi.
