Vaghar means tadka or tempering and Vaghareli Khichdi means seasoned or tempered khichdi is a traditional and authentic khichdi from Gujarat region. It is simple and easy to make khichdi recipe which made of moong dal and rice with addition of vegetables. It can be served with kadhi, curd or papad.
Vaghareli khichdi is one of mine fav khichdi recipe because of no garlic and no onion. It is a healthy and one pot meal made with dal, rice, vegetables and spices. It is very tasty and flavorful khichdi recipe. Gujarati Vaghareli or masala khichdi is a simple and staple food in Gujarat. To make this recipe you can combine yellow split gram or moong dal with rice or used mix dal also.

Ingredients for Khichdi Recipe:
1/2 Cup Rice
1/2 Cup Moong Dal (Split Yellow Gram)
1/4 Cup Potatoes, Cubed
1/4 Cup Carrot, Peeled and Chopped
1/4 Cup Frozen or Fresh Green Peas
4-5 Cauliflower, Florets
1/2 Tsp. Ginger Paste
2 Green Chilies, Chopped
2 Tbsps. Peanuts
1 Tbsps. Cashewnuts, Broken
Salt to Taste
1/2 Tsp. Turmeric Powder
1/2 Tsp. Red Chili Powder
1/2 Tsp. Garam Masala
For Tempering
1 Bayleaf (Tejpatta)
1/2 Tsp. Asafoetida (hing)
1 Tsp. Mustard seeds (Rai)
1/2 Tsp. Cumin Seeds (Jeera)
3-4 Cloves (Long)
3-4 Peppercorns (Kali Mirch)
1/2 Inch Cinnamon Stick (Dalchini)
2 Dry Red Chilies
3-4 Tbsps. Desi Ghee
How to Make Gujarati Vaghareli Khichdi Recipe:
Wash and soak the rice and dal in water for 30 minutes. Drain the excess water and keep aside. Heat the ghee in pressure cooker. Add cumin seeds, bay leaf, mustard seeds, asafoetida, cinnamon stick, cloves, dry red chilies, curry leaves and saute few seconds. Add ginger paste and green chilies and saute few seconds. Add broken cashews, peanuts and vegetables and mix well. Add salt, turmeric powder, red chili powder and garam masala and mix well. Add soaked rice and dal in pressure cooker with 3 cups of water and mix well. Cover with lid and cook it till to 4-5 whistles. Transfer into serving plate. Serve with papad and pickle.
Gujarati Vaghareli Khichdi Recipe
Ingredients
- 1/2 Cup Rice
- 1/2 Cup Moong Dal (Split Yellow Gram)

- 1/2 Inch Cinnamon
- 2-3 Cloves
- 2-3 Blackpepper corns
- Few Curry Leaves
- 2 Dry Red Chilies
- 1 Tsp. Mustard Seeds
- 1/2 Tsp. Cumin Seeds
- 1/2 Tsp. Asafoetida
- 3-4 Tbsps. Desi Ghee or Oil
Instructions
