Tamatar ka Paratha or Tomato flatbread recipe is an Indian flatbread recipe which is made with fresh tomato paste and some Indian spices such as turmeric powder, salt, red chili powder, green chili, coriander leaves. You can serve this paratha in dinner or lunch menu with any side dish.
When I have any leftover veggies in freeze, then i simply knead the dough with that and make a paratha for breakfast. It’s really enhance the taste and texture both of paratha. To make this paratha more flavorful, you can add more ingredients such as onion, green onion, anardana.

Ingredients
1 1/4 Cup Wheat Flour
2 Tbsps. Besan / Gram Flour
1/2 Cup Tomato Paste
Salt to Taste
1/2 Tsp. Turmeric Powder
1 Green Chili, Finely Chopped
1 Tsp. Ginger Paste
1 Tbsp. Oil
Ghee for Cooking
How to make paratha:
Combine all ingredients together in large bowl and mix well. Add little water (if needed) and knead smooth dough, cover and keep aside to set for 15 minutes. Now divide the dough into 6 equal portions and roll it into regular roti form using rolling pin. Heat the tawa and cook the paratha with little ghee/oil from the both sides until to golden and evenly cooked. Serve tamatar ka paratha with chutney or curd.

With the addition of tomato paste, these parathas must have some tang and would taste so good. I have never tried making this type of paratha. Bookmarking it to try.
Great idea to use your left overs and knead the dough , and I love this addition of purée in the dough . I used to make corn pizzerias with purée but that was years back ! Thanks for reminding !
