Jump to RecipeBoondi paratha is really interesting Indian flatbread which stuffed with stir fried boondi. For stir fried boondi, just cook the boondi with onion, green chilies and spices as other stir fry vegetable.
In preparing tikha or khara boondi, the batter is mixed with spices and salt before frying. Crushed curry leaves are added. Khara boondi is eaten by itself or is added to Indian-mixture.
Just knead the regular paratha dough and stuffed with boondi mixture and cook like other indian flat breads with little oil, serve along with raita or pickles. When you feel bore with regular paratha like aloo , gobhi or mooli just try these boondi paratha.
Boondi parathas are absoultely yummy and crunchy in texture, which can be easily made at home. Even you can make sweeter version also with motichor or boondi laddoo.
Boondi Paratha | Khara Boondi Paratha
Ingredients
- 2 Cups Wheat Flour
- salt to Taste
- Water for Kneading
- 1 Tsp. Oil
For Boondi Stuffing
- 1 Cup Boondi
- 1/4 Cup Onion Chopped
- 2 Green Chilies Chopped
- Handful Green Coriander Chopped
- Salt to taste
- Black Pepper to taste
- 1/2 Tsp. Cumin seeds
- 1 Tbsp. Oil
- 1/4 Tsp. Turmeric Powder
- Oil for Frying
- Extra Flour for Dusting
Instructions
- Take bowl add whole wheat flour, water, salt and knead a dough.
- Divide dough into equal portions. Roll out each portion into a small puri.
- Place a boondi mixture in the center, gather the edges, Roll balls in a little flour and flatten so that the boondi is spread evenly. Then roll out further with a rolling pin into a thick parantha.
- Heat a tawa and place the paratha on it. Cook the paratha from the both side till to cook or golden with ghee.
- Serve hot with raita or pickle.
How to Make Boondi Stuffing
- Heat the oil in non-stick pan, add cumin seeds they starts plutter.
- Add chopped onion and green chilies and saute one minute.
- Now soak the boondi in water for two minute and squeeze it.
- Add squeeze boondi into pan and spices, mix well.
- Cook the boondi two minute more and add green coriander and mix it. cool at room temp for further use.

Its very common paratha… most of time when i m not in mood for stuffing i made parathas with leftover rice, papad, boondi, even namkeen also. May be this boondi paratha available in paratha wali gali in old delhi.. not sure.
Boondi Paratha is a unique idea. These parathas will taste awesome with some raita or plain curd.
