Aloo Palak or Potato Spinach Curry is a vegan Indian dish made with potatoes, spinach, and spices.
This time I shared homemade version of aloo palak with minimal use of spices just like aloo methi I prepared at home. It is a very comforting food with goes very well with flatbread like roti or paratha. It is a perfect meal for upcoming winter season when lots green leafy vegetable available in market.
Aloo Palak, Aloo Methi, Aloo Pyaza all this kind of super comfy meals are my favourite Indian dish dish with goes great meal with dal, raita and flatbreads.
You can add chopped tomatoes also in this recipe which gives little tangy taste and liquid texture.
This recipe is super easy and healthy, gluten free and super comfortable.
Is Aloo Palak good for weight loss?
Can diabetics, heart patients and overweight individuals have Aloo Palak? No, this recipe is not good for diabetics, heart, and weight loss. Potatoes being high in simple carbohydrates will lead to weight gain and are not good for people with diabetes, heart problem and obesity.
Ingredients
3 Medium Potatoes, Cut into Small Diced
3-4 Cups Spinach, Chopped
1 Onion, Chopped
1 Green Chili, Chopped
1 Inch Ginger, Chopped
2-3 Dried Red Chilies
1 Tsp. Cumin Seeds
2 Tbsps. Oil
Pinch of Hing
1/2 Tsp. Turmeric Powder
1/2 Tsp. Red Chili Powder
Salt to Taste
1/4 Tsp. Garam Masala
1 Tsp. Coriander Powder
1 Tbsp Lemon Juice
Instruction:
Heat the oil in a non-stick pan. When oil is hot, add cumin seeds.
When cumin seeds start crackle, add hing, ginger, red chili, green chili and cook for 1 minutes.
Add onion and cook till to soft and translucent.
Add chopped potato, and coriander powder, red chili, turmeric powder, and salt along with ¼ cup water. Mix well.
Close the pan with lid and let cook for 7-8 minutes until half done on low flame.
Now add chopped spinach and mix well. Cook for 4-5 minutes till to soft.
Now add garam masala and mix well. Add lemon juice and mix well.
Serve with roti and curd.
