Khichdi is a one pot meal which is very nutritious and healthy meal. This is not only basic dal and rice combination but you can add more variation through millets, spices and vegetables.
Khichdi is a tradition of India, which almost cooked in all states of India with variety of seasoning, flavors, vegetables, lentils with rice. Amish Khichdi or Amish khichuri is also known as Bhog’er in West Bengal. It is a Bengali style masoor dal khichdi which cooked together with par boiled vegetables and pre-cooked dal and rice. When we used ample amount of onion, ginger and garlic in khichdi then its call aamish or non-vegetarian khichdi other hand, without onion and garlic khichdi is known as Niramish or sativik khichdi which used as Bhoger khichdi to serve God as prasadam. In Bengali homes, they used big chunks of potatoes, cauliflower, peas, beans and carrot as vegetables in khichdi.
Amish khichdi is Bengali style masoor rice khichdi which made with onion, garlic and lots of vegetables. You can serve this khichdi with papad and pickle. For this khichdi, you have to cook rice and dal separately and par boiled the vegetables.

Ingredients for Amish Khichdi:
1 Cup Basmati Rice
1 Cup Red Lentils (Masoor Dal)
1/2 Cup Cauliflower
1/4 Cups Carrots
1/4 Cups Green Peas
1/4 Cups Green Beans
1/2 Cups Potatoes
1 Medium Sized Onion, Chopped
1/2 Tsp. Garlic Paste
1 Green Chili, Chopped
2 Whole Dry Red Chilies
2 Bay Leafs
1 1/2 Tbsps. Mustard Oil
1/2 Tsp. Cumin Seeds
1/2 Tsp. Turmeric Powder
1 Tsp. Cumin Powder
1 Tsp. Coriander Powder
1/2 Tsp. Red Chili Powder
Salt to Taste
1/4 Tsp. Garam Masala
2 Tbsp. Green Coriander, Chopped
How to Make Amish Khichdi:
Wash and soak the dal and rice in water for atleast 2-3 hours. Drain the excess water. Heat the 1 tbsp. ghee in cooker, add dal and rice in pressure cooker with 4 cups of water. Cover and cook in pressure cooker till to soft.
Heat the mustard oil in a pan. Add cumin seeds and when they start crackle, add dry red chilies and bay leafs. Now add ginger paste and green chilies. Add chopped onion and saute well. Add turmeric powder, coriander powder, cumin powder, red chili powder, garam masala and saute for few minutes. Add little water to avoid burnt masala. Add par boiled vegetables and saute for 3-4 minutes. Add cooked rice and dal mixture with salt and little water. Cover with lid and cook again for five minutes more. Transfer into a serving dish and garnish with extra dollop of ghee and coriander leaves. Serve hot with baigun bhaja and curd.
