Paneer Pasanda

 

My father is biggest lover of paneer dishes, so this time i prepared paneer pasanda for him. Paneer Pasanda – Paneer slices stuffed with green chutney, mashed paneer and nuts mixture, and cooked in flavorful onion-tomato gravy. Paneer Pasand is a perfect gravy based paneer recipe for formal get togethers or party at home.

 

Paneer Pasanda is a rich and delicious paneer recipe in which fried and stuffed paneer sandwiches are served in creamy and rich onion tomato based gravy. To prepare no onion and no garlic version, just avoid the onion and garlic paste, making gravy.

 

 

 

To paneer pasanda is serving with tandori roti, butter naan, laccha paratha, this creamy and rich gravy goes well with rice dishes also.

What we needed to prepare Paneer Pasanad:

For Paneer Fritters:

200gm Cottage Cheese or Paneer

1 Tbsp. Cashew, Broken

1 Tbsp. Raisins

1 Tbsp. Green Chutney

1/2 Tbsp. Green Coriander

1/4 Cup Cornflour

Salt to Taste

Oil for Frying

For Gravy:

2 Medium Sized Onion, Fried and Grounded

1/2 Cup Tomato Puree

1/2 Cup Fresh Cream

2 Tsps. Ginger Garlic Chili Paste

3-4 Tbsps. Butter

2 Small Bay Leaves

2 Green Cardamoms

2-3 Cloves

Salt to Taste

Red Chili Powder to Taste

1 Tsp. Coriander Powder

1/2 Tsp. Turmeric Powder

 

How to prepare paneer pasanda:

Cut the paneer into four thin slices and mash the remaining paneer into separte bowl. Add broken cashew nuts, raisins, green chutney and coriander and mix well. Spread the paneer mixture on paneer slices and cover them with other paneer slices like sandwich. Cut them into small triangle. Combine cornflour, salt and water to make thick consistency batter. Heat the oil in non-stick pan. Dip the each paneer triangle in the batter and shallow fry till to golden and keep aside on kitchen towel.

Heat the butter in a non-stick pan and bay leaves, cloves, cardamom, cumin and saute them. Add onion paste and ginger chili paste and saute till to golden. Add tomato puree and mix well and saute for 2-3 minutes. Add spices and mix well. Add cream and mix well and cook for 5-6 minute more and paneer slices at the time of serving. Serve hot paneer pasanda with butter roti or laccha paratha.
