Bolani is a traditional Afghani flatbread stuffed with different variation like potato, spinach, pumpkin or green lentils.
These are generally served warm as side dish or flatbread with curd or yogurt even as main dish. It’s a perfect dish which includes various nutrition facts such as proteins, fiber and vitamins.
Bolanis are also ideal for vegans and vegetarians those looking for healthy recipes as main dish. It’s an ideal recipe for everyone, simple to make and easy ingredients.

Afghani Bolani | Potato and Green Onion Stuffed Flatbreads
Ingredients
For Dough
- 1 Cup All Purpose Flour
- 1/2 Cup Wheat Flour
- Salt to Taste
- 1 Tbsp. Olive Oil
- 3/4 Cup Water Warm
For Stuffing
- 4 Medium Sized Potatoes Mashed
- 1/2 Cup Green Onion Chopped
- 2 Green Chilies Chopped
- Handful Green Coriander Chopped
- Salt to Taste
- Black Pepper Powder to Taste
- Olive Oil for frying
Instructions
- Combine flour, salt, oil and water and knead semi soft dough. Cover with dump clothe and keep aside to rest for atleast 30 minutes.
- Now combine mashed potatoes, chopped onion (green and white both), salt, pepper powder, green coriander and green chilies in separate bowl and mix well and keep aside.
- Divide the dough and stuffing both into equal four portions. Take one portion and roll it as thin chapatti.
- Place the one portion of stuffing in center and spread it in half. Fold the bottom half up over the top half and seal the edges.
- Repeat the same with the remaining dough and stuffing.
- Heat the tawa on medium flame, grease with little oil and shallow fry the bolani one by one from the both side till tol golden brown and cooked.
- Serve hot bolani with green chutney and curd.

Another flatbread which reminds me of aloo Paratha . The spring onion and black pepper would lend it a unique flavor . Must try it soon .

I too have posted an Afghani Bolani recipe under this theme. I added some spinach also to the filling. Yours have come out great.
A distant cousin of aloo paratha it is.. Definitely filling and the filling would be flavorful with spring onion and pepper.

This afgani bolani , a cousin of our own aloo paratha, is definitely looking droolicious. Addition of onion greens must have imparted a unique flavor.
A question before I make this. Are the green chillies supposed to be hot or not?
