Khichdi is a very comforting Indian dish which made from rice and lentils but other variations includes bajra, mung dal, and daliya. It is considered as one of the first solid foods that babies eat. Khichdi is a savory porridge.
Risotto is a northern Italian rice dish which cooked with broth and cooked till to creamy texture. It is Italian dish which contains butter, olive oil, onion, cheese, garlic and vegetables. Risotto, riso means rice is basically creamy and flavorful Italian rice dish.
This time I made dal khichdi risotto for khichdi festival which was hosted by Srivalli. In this recipe I used moong dal and Arborio rice instead of regular Indian rice. I cooked this recipe in vegetable broth to get more flavors. It is a really great combination of Indian dish khichdi and Italian dish risotto. I avoid parmesan cheese in this recipe. It can be served with curd, butter, chutney and pickle. It is very healthy and nutritious recipe and good option for lunchbox recipe.

Ingredients for Dal Khichdi Risotto Recipe:
1 Cup Arborio Rice
1/2 Cup Whole Green Gram (Sabut Moong Dal)
1/4 Cup Onion, Finely Chopped
2 Green Chilies, Finely Chopped
1 Tsp. Ginger, Chopped
1 Tsp. Garlic, Chopped
1 Tsp. Mustard Seeds
1 Tsp. Cumin Seeds
Salt to Taste
1/2 Tsp. Turmeric Powder
Few Curry Leaves
3 Cups Vegetable Broth, Optional
2 Tbsps. Olive Oil
2 Tbsps. Butter
2 Tbsps. Coriander, Chopped
How to Make Dal Khichdi Risotto Recipe:
Wash and soaked the green gram in water overnight. Drain the excess water and keep aside. Heat the butter and olive oil in a non-stick pan. Add mustard seeds and cumin seeds when they start splutter. Add ginger, garlic and green chilies and saute few seconds. Add chopped onion and saute till to translucent. Add rice and saute few seconds in ghee. Add moong dal, salt, turmeric powder and mix well. Add 3 Cups water or broth mix and cover with lid. Cook till to soft and mushy. Add coriander leaves and mix well. Serve hot with papad and chutney.
