Sondesh or sandesh is a Bengali dessert created with milk and sugar. Some recipes of Sandesh call for the use of chhena or paneer (which is made by curdling the milk and separating the whey from it) instead of milk itself. Some people in the region of Dhaka call it pranahara which is a softer kind of sandesh, made with mawa and the essence of curd.
Orange sondesh or Sandesh is a sweet Bengali delicacy that will, surely make it me hungry anytime. It’s very rich, healthy and light dish which made by cow’s milk curdle. Paneer or cheese is a good source of protein. This time i shared orange sondesh, after amazing fusion of orange juice and segments to this recipe, makes more flavorful and delicious.
A sweet dish by the name sandesh is mentioned in medieval Bengali literature, including Krittibas’ Ramayana and lyrics of Chaitanya. However, the ingredients of this original dish are not known. This dish was most likely different from the modern chhena-based sandesh, being made of solidified kheer.
For more complex and elaborately prepared sandesh, the chhana is dried and pressed, flavored with essence of fruits, and sometimes even colored, and cooked to many different levels of consistencies. Sometimes it is filled with syrup, blended with coconut or kheer, and molded into a variety of shapes such as conch shells, elephants, and fish.

What we needed to prepare Orange Sondesh Recipe:
2 Cups Chenna/ Crumbled Paneer
4 Tbsps. Powdered Sugar or as taste
1/2 Tsp. Cardamom Powder
Few Drops of Orange Juice
For Stuffing
2 Oranges, Pulp
1 Tbsp. Sugar, Powdered
1 Tsp. Orange Juice
1 Tsp. Chenna
How to Prepare Orange Sondesh at home:
Boil the milk and add vinegar or lemon juice in boiled milk, when curdle starts, strain the milk in muslin clothe and wash under a running water to discard the lemon taste. Keep aside this fresh milk chenna or cheese to cool. Now Transfer the chenna into plate, add cardamom, sugar and orange flavor or juice and knead it till the mixture becomes smooth. Add a tsp of juice if required. Divide the dough into equal portions and keep aside.
Heat the orange pulp in non-stick pan till it dries, add sugar and chenna and gently toss them in it. Cool and keep aside. Take a portion of chenna and stuffed with tbsp stuffing and bind it as round shape. Repeat the same process with remaining portions. Keep in freeze for atleast one hour and served chilled.

Never tried the stuffed sondesh. This is great Preeti, infusing the orange juice and stuffing it with the same is simply delicious. A great treat for milk sweet and orange lovers.
