Arbi ki Sabji | Tari Wali Arbi Recipe

tari wali Arbi ki sabji or masala arbi is a summer special vegetable which is most favourite recipe at my home which mostly serves in lunch menu with sookhi or dry vegetable, raita and phulka (Indian flatbread). It is a traditional north Indian recipe which is perfect for everyday meal. Arbi ki sabji prepared with spices and taro root vegetable only. Use of onion, tomatoes is totally depend on your taste and preference.

 

This recipe is rase wale sabji or tari wali sabjii which is prepared without onion, tomato and garlic. Even you can prepare this recipe during fasting time. Addition of lemon juice gives a tangy taste.

 

 

 

What is the vegetable arbi in Hindi?

 

Arbi is also known as taro root in English and is a starchy root vegetable. It belongs to the Colocasia family and both, leaves and root (tubers) of this plant are used in cooking and cannot be eaten raw.

 

 

Serving Suggestions for Arbi Masala

Arbi Masala or tari wali sabji served along with poori, paratha or roti. Even you can serve with rice and dal as everyday meals.

Ingredients

400gm taro roots / arbi/ colocasia

2 green chilies, chopped

1 tsp ginger paste

3 cup water

2 tbsp desi ghee

1 tsp carom seeds (ajwain)

1/4 tsp asafoetida

1/2 tsp red chili powder

1 tsp coriander powder

1/2 tsp turmeric powder

Salt to taste

1/2 tsp garam masala

4 tbsp coriander leaves, chopped

Lemon juice for serving

 

Instructions

Wash arbi with enough water and then wipe with a kitchen napkin to dry.

Now peel the arbi and cut into sliced. Keep aside.

Heat the 2 tbsp of oil or ghee in a pressure cooker.

Add carom seeds, asafoetida, green chili and ginger paste. Saute for 5 seconds.

Now add red chili powder and turmeric powder and arbi and mix well.

Add coriander powder, garam masala, salt and mix well. Add water and stir it again

Now close the pressure cooker with lid and cook for 5-6 whistles or till arbi gets soft.

Open the lid when pressure release completely. Add lemon juice and coriander leaves for garnishing.

Serves arbi masala with roti, paratha or rice.
